The "bloom" on an egg, also called the cuticle, is a natural, protective layer secreted by the hen as the egg is laid. This coating acts as a sealant, preventing bacteria and moisture from entering the eggshell, and helping to preserve freshness. Washing eggs removes this protective bloom, which is why all of our eggs are supplied unwashed.
When you're ready to use your eggs, just wash them in cold water. Washed eggs should be refrigerated if you're not going to use them straight away.
